I'd made a few recipes, and wasn't completely happy with any of them, so I decided to do what I do best and create my own. I came up with this, my family and I have tried it three times, each time a winner. Yum yum yum!!!!
If you don't like the idea of raw eggs in your ice cream, you can warm everything but the berries in a saucepan on low - medium heat, then whisk in the eggs and cook for 5 minutes. Cool completely in the fridge, then add berries and pop into your ice cream maker.
1 can coconut cream
1/3 cup maple syrup
1 TSP vanilla essence (one day soon I'll try the real stuff!)
Squeeze lemon juice
250 g raspberries or your favourite berry
Whisk together coconut cream, eggs, salt, maple syrup, vanilla, lemon juice. Add berries, then add the mix to your ice cream maker and follow your machines instructions. Yum!!!!!
